New Year’s Cocktails: Blind Elephant mixologist makes the “Sauv-Wa-Fair”

WILMINGTON — New Year’s Eve is finally here! How will you celebrate?

Whether you’re headed out for a night on the town or just simply staying at home to ring in 2017, Port City Daily has you covered with a few New Year’s cocktails we’ve shared with our readers this week.

Our reporters stopped by businesses in downtown Wilmington to ask mixologists what type of cocktail would they make to celebrate 2017. The final drink in our series is a cocktail made at The Blind Elephant.

Mixologist Nate Fabian recommended the The Blind Elephant’s “Sauv-Wa-Fair.” It’s a light cocktail drink made with grapefruit juice, vodka, elderflower liqueur, sauvignon blanc wine, and Boston bittahs.

“It’s a light, won’t weigh you down, stay on your feet, kind of drink,” Fabian said. “You can still finish the rest of your day out without feeling tired.”

This drink is stirred, not shaken, Fabian said. The name comes from the French phrase “savoir faire.” The way The Blind Elephant drink is spelled-out is the pronunciation key for the phrase.

“It’s named like that so people wouldn’t butcher the pronunciation,” Fabian said. “So that’s actually the pronunciation key for the real word.”

Fabian showed us the recipe for the Sauv-Wa-Fair so you can try it at home, or visit Fabian at The Blind Elephant bar this weekend and try this drink.

Here’s the recipe to try at home:

  • 1 ½ oz. Cathead Vodka
  • ¾ oz.  St. Elder Elderflower Liqueur
  • 1 oz. Ponga Sauvignon Blanc
  • 1 ½ oz. Grapefruit Juice (fresh)
  • 4 drops Bittermens Boston Bittahs

Start off with the Cathead Vodka and pour it into a glass mixing pitcher, followed by St. Elder Elderflower Liqueur, Ponga Sauvignon Blanc and fresh grapefruit Juice. Add four drops of the Bettermans Boston Bittahs. Add a ice and stir for a few seconds. Double strain the mixture into a cocktail glass and finish with “an essence” of grapefruit.
