Islands Fresh Mex to open third location in downtown Wilmington

A local eatery is opening up another shop in downtown Wilmington.

Islands Fresh Mex Grill, which currently has two locations–260 Racine Drive and 7032 Market St.–is expanding with a third restaurant in the old Fuzzy Peach spot at 310 N. Front St.

The locally owned chain hopes to have the approximately 2,000-square-foot downtown spot open in June, according to Ed Wolverton, president and CEO of Wilmington Downtown, Inc.

A banner at that location announces the upcoming opening of the dining establishment, which will serve breakfast, lunch and dinner, as well as provide catering services. Fuzzy Peach operated there as a seasonal business for several years, Wolverton noted.

Islands, which the owners describe as a “fresh and fun Mexican restaurant with a touch of the Caribbean,” serves up fast-casual fare, such as made-to-order burritos, tacos, salads, nachos, quesadillas and enchiladas.

The first grill opened in 2008 on Racine Drive with an emphasis on establishing an eco-friendly environment, which has continued as the business has expanded.
